what kind of pipes are okay to change to aftermarket(reworded)

straight pipe is a lot louder. you might be okay if you never got an aftermarket header.

in this case, it is pretty much the same thing. an aftermarket mid-pipe wouldn't have a secondary catalytic convertor, and probably not a resonator, but some do.

no, nothing wrong with changing the mid-pipe is fine, but in your case, you were pretty much asking about making a decision about the same thing.

anyway, your exhaust is 4 sections of piping in this order from your engine to the butt of your car:

header, s-pipe, mid-pipe, axelback.

you have a catalytic convertor in your header, any aftermarket header will mean you have no primary catalytic convertor.

then is your s-pipe, it is a crush bent restrictive peice of exhaust shaped kinda like the letter "S" so a smoother wider mandrel bent one would be better.

your mid-pipe has a secondary catalytic convertor on it, not as big as the one in the cat, but there is one there, also, it has a resonator, and a few little bends. replacing this will elimate the second cat, and a mandrel bent one will be less restrictive.

lastely you have the axelback portion, which is basically a muffler, replacing this with a less restrictive, better angled exhaust would make it better.

Headers obviously give a nasty rasp, but would replacing the mid pipe with just a straight pipe eliminate any of the rasp, or would a resonator be a better route to go?

correct, because the reason for the rasp is that there are less things absorbing the sound made by the engine and the exhaust. i.e. the catalytic convertors in the header and the mid pipe, and the resonator on the mid-pipe. so if you get rid of those, you need some good resonators to absorb the noise.
