Now we all know we can fit an 8" sub in the front doors. Would you get better mid bass out of an 8" over a 6.5" comp?
And another question I have, since I have 4 6.5 speakers each with highs on them, should I disconnect the stock tweeter?

8 vs 6.5: I would use an 8 only if the subwoofer was 12" or larger, and either isn't integrating with my 6.5 in the door (tonally or volume) or the sub doesn't play above 50Hz very well, and the 8 can play up to the frequency of the next driver.
Dynaudio, Focal, and a few other companies make 7s and 8s that can be used in a two-way system given a capable (read $$$$) tweeter. But, if you were to look at these drivers, you'd find they don't play any lower then their 6.5 counterparts. What is gained is efficiency, which allows the output level to match the tweeter and thus no attenuation circuit (less components altering the music).
Also, the 6.5 can play down to the subwoofer xover.
The other situation I'd use an 8 would be because I wasn't using a subwoofer but then I'd want to use a midrange because integrating the sound from an 8 with that of a tweeter is difficult.
Should you disconnect the stock tweeter? Yes. If you don't like the result, reconnect them. Personally, I find the stock tweeters too harsh. You should go to ICIXSound.com and pick up a set of eDi 6000 or 6500 to replace your front components.

It's all in the frequency response of the 8" and the tweeter. It'll be fairly difficult to find a tweeter that will have a response that will get down low enough to match the 8" without damaging it. The 8" may be able to get a bit higher, but it'll be difficult.
You'll probably also have to go active or make your own crossovers.
There's ALOT more to it than just slapping in some 8's in your doors. It would also be a good idea to sound deaden your entire door as well as your door panel. It would be a lot of work and a lot of $$$, but if you're an audiophile, do it!!!

I know how that goes... I spent over $350 for some JL components a couple years ago. Now I want Resonant Engineering XXX 6.5's because they have amazing midbass, decent tweeters, 2ohm, and they're about $300...
