What do you mean by canyon runs? Club sponsored events on closed courses? Or just fun in the sun? You really need 18" high performance wheels/tires to be competitive in the former. (Search the forums for more specific advice). Your tire size is fine for the later and would provide a kinder ride. (Speedo/odo will read about 1% faster than actual.) To be honest, the brand/model of tire and suspension upgrades have far larger impacts on cornering than small differences in tire size.

Suspension upgrades: TRD (factory) or Tanabe (aftermarket) springs and/or swaybar improve handling enormously at the expense of a harsher ride.

You'll be fine. I use 235/45 on my 17's. make for a nice footprint. Albeit rain performance sucks. My front bumper can attest to that...
