Just curious is one could swap out the stock 1NZ-FE for something like the 1.8L Corolla engine (1ZZ-FE) or even the 180 HP Celica GTS (2ZZ-GE)?

the 2ZZ GTS motor is DRIVE BY WIRE since 2003. Youd have to retro fit a 2002 intakemanifold and throttle body to a 2004 or 2005 Celica motor depending on the year of your box to keep everything legal.

How come you can't put the "wire" in it too? It's just a potentiometer on the gas pedal connected to a motor on the T.B. and another module to control it. If you already had to put the Celica computer in, why wouldn't this be part of it? I used to work for a company that made them and we would operate them through a laptop all the time, or a gas pedal on a stand, not even hooked up in the car.

exactly. it's been discussed many time with many possible swaps. only one has really been made and it was from nitrous express and then i believe they blew their motor

You could, but have fun doing that. Im more old school. Id prefer a throttle cable accelerator anyways.
