Default I have no idea what size tire

Alright so planning on getting rims, but dont want to rub or roll my fenders

If I'm on a 2.6 inch drop both front and back and planning to get 18x7.5 or 18x8 rims, what size tire should I get that I wont have any problems with?

wow, 2.5 inch and 18inch rim,
your ride will be extremely harsh.

225/40/18 the norm for 18s, but you can get 215/35/18 which has a paper thin sidewall (reduced rubbing). both these sizes are very common, so theyre easy to find cheap. i've heard of 215/40/18, but that very rare and much more expensive.

basically I want the car to look like this (getting 18s)

but not sure what size tire and offset to get.

as for being harsh, its ok cuz I might go to vegas soon (one of the places with the best roads!)

they wont look that big at all, 18's are much smaller

I would suggest an 18" with a high offset like 40 so you can tuck them in and eliminate rubbing. If you try to get them flush with an offset of 35 or 38, you may rub with that kind of drop.
