I know that sounds stupid, but why install projector lights ?

Some people like them because it improves the light output. Some are happy with stock. Just like some people are happy with the stock stereo, others feel some need to improve it...

Projectors do exactly what you think they do, they project the beam. There is a little reflector inside the projector, but the lens is what "projects" the light. Depending on the projector, you can get increased or degraded light output. There are HID projectors and halogen projectors, some projectors are designed for low beam, high beam, or fog lights. You have to be careful with aftermarket stuff because you don't always know what they use, so if you do, I'd recommend that you stay with a name brand.

If you're just getting halogen projectors, I think most people just get it because the headlights look cooler. If you swap in something like sylvania silverstars, you can get that "twinkly white" look that a lot of people like so much. Just remember that halogen is still halogen, whether it's a projector or a reflector, that doesn't change the light output from the bulb...

You'll also find out that 98% of the HID conversion kits you see on the market are total junk and dangerous. Most people also don't upgrade their wiring, which doesn't help much either. Same goes for most projector kits too.
