$390 for headrest monitor installed
just order the directed monitors, they come WITH headrests that match whatever car you want to put them in, for a little bit more than your asking. Nice monitors and no cutting required.

$300. for parts and labor I dont know where you get your equipment from but here by me you can get 7" monitors for about $120. Thats $240 for (2) so your gonna tell me that it will cost $150. to install them hes getting ripped especially on some no name tvs. . I can go to NY get (2) 7' monitors have them installed in my factory headrests all for around $300. - $330. So like I said $400. to have some rip up your own headrests not worth it... I could see if he was getting (2) new headrests plus install then I'd say do it..
$120 is a very cheap TV. I just assumed $150 each for a mid range TV.
I'm sure you can get some really bad ones for $80 each somewhere, or you can spend $400 each for Pioneer.
It is your money, your car, choose whether you want to spend a little and have them look bad and break later.
I think $400 is a good deal for the Valor screens installed. I know some people would pay a lot more than that.
