Default New owner susp questions

Hey all, just wanted to say hi. Just bought my xb about 2 weeks ago. 2012 with the TRD 19" wheel and tire package. Electronics is the thing Im most comfortable with doing myself, so already upgraded full stereo minus the HU just cause I really like the stock HU and features. But Im now looking to lower this thing and Ive been reading the forum non stop.

Im pretty set on the DF210's and it sounds like the stock shocks will be fine to use for awhile. But the forums made me question a few things.

How do I know what my offset is on my wheels? What is the benefit to changing the offset? What makes it better or worse? And should I cut the bump stops out? My tires are 235/35 19's.
