Will it harm the car to drive it with the gauge cluster/HVAC removed??? If not only for a short trip to the bodyshop???

You are gonna send them off for the LED modification right? If taken off properly it will not harm.

you're odometer is going to be slightly off, but that's not really a huge deal if it's a short trip

Yea, if you have the cluster off and drive, it could be considered tampering with the odometer reading and that is illegal. I am sure if it is just a short distance, it won't matter though.
