Ceramic coated header keeps the heat in side with the exhaust , keeping your exhaust ( cat converter) temp up while it keeps under hood temps down. It also looks nicer longer. Doesn't melt the shifter cables ( at least after 100k miles so far)
Stainless steel ( it really isn't stainless) or chrome plated look nice ( for awhile after all it does discolor) and allow the under hood temps to raise , can also cause the shifter cables to melt if they come into contact.

the ceramic coating is really durable , it won't crack,chip , or flake . As long as you don't beat on it with a hammer.
Had the DC Ceramic coated on my box for just shy of 98k miles , has not discolored , chipped , cracked or flaked.

I really meant to clarify that I just thought the ceramic had more chip potential during install.
The ebay ones seem to flake if you look at a few threads here.
I have a stainless Strup and I got it from some dude in GUAM about 2 years ago for $140 in auction. I only just this month installed it. No problems and it is fun to have.
