Since that bolt isnt in the middle of the car I doubt it. You could add another to make a triangle or make dog legged trailer tongue lol.

I removed the rear seats and put down a new tarp in my xB. I even think about making a plywood floor sometimes!

You cannot / don't want to tow a trailer from the tow hook. It is off center and a trailer is made to be towed on center. Even a small trailer needs to be hooked up properly and an xB is not really designed to tow much over 500 lbs. I do not recommend home brewed trailer hitches at all.
