Seat covers? or what can I do to protect my seats?

Couple of choices depending on budget and quality.
Cheapest would be to get generic seat covers from any number of auto parts stores or online.
Next step up would be Clazzio form fitting seat covers. These can be had in PVC, leather, or suede in a couple different colors and a variety of stitch patterns. These look like replacement seat covers but actually are slip on so you don't have to change anything on the seat.
Last step up is replacement seat materials covers. This type involves taking the seats out of the car, pulling all the fabric off of them, and then replacing them with new material, generally leather. This is also the most expensive option and the most time consuming. With this you get any color you want for your seats and you can choose the pattern style. I went this route and had chocolate leather seats from leatherseats.com.
If you want a factory look and don't need a non factory color then I highly recommend getting a set of Clazzio covers. I've had a set and loved them, just didn't work color wise with the current interior design of the car.

I put printed x-large T-shirts over the seat backs and sock monkey bomber hats on the headrests, I'm more concerned about UV than dirt though. The "Box 'O' Monkeys" is a plus ;) Oh, and a full sized sock monkey as a neck pad.

I'm happy with my Clazzio's, I have a set in both of my xB's.
Go full leather though, I went with suede and it has faded from black to kind of a grey.
Here are my faded covers in my RS 7.0, could look worse I guess
