This may not be as convienient at just setting one option once, but it will at least get you out from under the notification SPAM so long as you also remember to 'opt-out' again each time you post:

Go to Watched Topics and there will be a list of all the topics you are currently "watching" (get e-mail if there is a new post).

There is a check-box for each item that will allow you to stop watching that topic when you check the box(es) and then click "Stop Watching" at the bottom of the page... (Notice at the bottom of the page, just under the "Stop Watching" button, are options to "select all" or "deselect all.")

Once you have your current list of topic notifications under control, remember to uncheck the 'notify me' box each time you post, and you won't get any more!

Is there any way to turn off the notify by default? Or at least give me an option to turn it on by default via my profile.

POLL TIME!

How about the setting to show whether we are online or not, can we have control over that again?

Nope. Email me if you want to change it. I think its more important that newbies are able to register easily and uncomplicated-ly than to have some of these options.
