haha it's funny - i'm kind of in the same boat - I've got 100 red 5mm LEDs and I want to fill in some areas where my underbody LED kit doesn't hit. I'd also like to add to my existing footwell red cathodes.

Does anyone have advice about how to wire them? I've seen diagrams about wiring them in series/ parallel, but I'm not sure what kind of wires to use and how to crimp into them to connect the individual LEDs. I know I need resistors so I'm ok on that part. Does anyone have pictures of how they've done it?

deffinately doing air vents, thinking even the ones under the seats

you'll need to solder the resistors to the longer lead on the leds, use 18 gauge or smaller since they don't draw any power, not sure about series though
