I personally do plugs, ATF, brake fluid, PS fluid, oil/filter, air filter, cabin filter, clean/adjust rear brakes, rotate tires, injector cleaner, and drain/refill the radiator. But, that may be a bit excessive. I can't help it though. It seems like a lot, but it's only every 2 years.
I say at least do plugs too, and go over the list of stuff in your manual.

The manual tranny fluid is easy to change. Just need a large socket 25mm I believe for the drain bolt back by the driver sides axle shsft where it enters the transmission. Then there is the fill bolt behind the radiator and below the starter. Its hard to get too. I reached around the flaring by the bumper to access it.
Tranny fluid smells nasty and you need a different drain pan than you use to change your oil as you are likely to toss this one for the nasty smell.
To fill it you can get a tranny fluid fill kit which is like a big soal depensor pump and hose. It takes just shy of 2 qts of fluid to fill it and really you just fill it til it starts to run over, then you are full.
