if you shave it down wouldnt the offset get lower? so if its at a +35 now and you shave it to "+40" meaning "add" another 5 mm wouldnt "shaving" bring it down to +30.... which in turn would be a better offset

What you're stating is true for negative offsets, which we hardly see on our cars.
For positive offsets, for example with the +35 offset, when you shave it down +5 offset, that means subtracting -5 offset, which comes out to +35-(-5) = +40, mathematically.
