I've reduced all of my advice on camera purchases to one of two cameras (for everyone):
Code:
Canon PowerShot SD850 IS and Canon EOS 400D/XTi
If you want to explore photography as a serious hobby, for art, or as a career this motto should apply: "Purchase the newest Canon or Nikon camera that YOU can afford."
If you think you're going to explore photography seriously (that is to say, more than just taking snapshots at parties and outings) I wouldn't settle for anything less than a D-SLR sporting a full-frame, 10-12 Megapixel sensor but that will set you back maybe ttwo grand. You can compromise, on the full-frame high megapixel sensor and get an entry level D-SLR for $600 like the Canon EOS 400D/XTi which is more than capable of taking a good shot but you also sacrifice size. You'll need a dedicated camera bag for the body and lens(es).
Both Zack and myself have D-SLR's and I'm sure he'd agree with me that he wouldn't use a point-and-shoot if given the option between the two. For the investment.. with point-and-shoots costing as much as an entry-level D-SLR, the smart move would be to get the D-SLR. Photography is a great, creative hobby and outlet and if you're serious about it, you'll get endless use out of the camera. ;)

Yea Rob, no problem, just remember, buy the best you can afford. If you go the D-SLR route it will take time and practice (take lots of pictures!) to learn the manual controls but you'll be so much happier as a result. You can shoot at night without worry with the right combination of lens and camera control.
Here are some night time or low light shots taken with my Canon 300D for comparison: http://flickr.com/search/?q=night&w=...51%40N01&s=int

You will acquire less grain in your night shots if you use an ISO around 100 but you'll need a longer exposure. The general rule of thumb is that if you're taking a night shot and want to use a higher ISO, like 800 or 1600, you need a faster shutter release.
Optimal setting for a stationary object, at night with ambient lighting (building lights, car lights, etc..) is: 20" f/6.3 ISO 200
Code:
20" = 20 second shutter time f/6.3 = F-Stop / aperture value ISO 200 = cameras light sensitivity
