Does anyone know the maximum amount that can be removed from the head surface for a safe bump in compression?

That depends on your valve to piston clearance.. but either way I wouldn't even know what to tell you assuming all stock parts.

Best things to do is to get someone who's had machining experience with a 2AZFE head.
