Not entirely sure how the fitment would be, but you def would be sticking out past the fenders. I can assume you will be rubbing quite a bit.

yes.
you can add a 5mm spacer (or make it 18x8 et20 or 18x8.5 et25) to make it flush like a toilet. rear fenders must be rolled.

J-Lines highest offset available +30. So I was going to do 30 in the front and 25 in the back. Even with rolled fenders you guys think I would need to stretch my rear tires to maybe 215 instead of 225?

no.
stick with 225/40/18 front and rear. a 215/35/18 is too thin and will bend the lips easier over a pothole.
et30 front, et25 rear is excellent.

since youre considering 18x8 front and rear, maybe you should get et30 front and rear. then you can rotate the wheels for longer milage. put a 5mm spacer in the back to push them out (which would equal to what youre proposing). a 5mm lower offset wont be that noticable on the wheel's lip, if the wheels are the same width front and rear.

i cant rotate my wheels at all since my tires and directional and my wheels are staggared. since i go through tires so quickly, i buy cheap high-mileage (no performance) tires lol.
