The belts need to be surprisingly tight to not come off and not squeal. We used this tool to get to the right tension

Yes, link is dead but I do still have control of that website.
My new UI tools don't give me the same FTP raw access to upload files like I had before. The good news is that there are plenty of YouTube videos covering the same subject.

I'm so glad to find out I wasn't the only person having this issue.
I inherited my 2005 xb from my fiancee with 287,000 miles on it. It had been slipping and eating PS belts so when I took it over, I just cut it off and drove it without power steering.
She needs the car for a bit because her car is in the shop so I have to put one back on and it just feels otherworldly levels of vindicating to find this thread and find that other people have had the same issues.
