iTunes text doesn't read on the Pioneer car stereo system

Are you making an MP3 disc or a normal audio CD? I dont use iTunes but in Nero there is a small check box that turns on the CD text options. Look around in the program setting for a cd text option.

Your burner has to support CD-TEXT first, then you need to enable that in iTunes (get the latest version). Go to Preferences, then somewhere under Burning you'll see a checkbox for the CD-TEXT option.
