SQ Question for a audio newb

You would have to stage everything for some primo SQ.
I would suggest getting some kick panel speaker boxes made, getting some good components (maybe Pioneer's PRS series speakers, or Alpine's Type R speakers), a good head unit with good audio control...

I would suggest going with the Alpine Type R setup.
It is less expensive than the Pioneer route, and will still give you great sound quality.

Certainly there must be a head unit without the lcd screen/dvd capabilities that has true SQ functionality as far as audio controls go that fits within my budget. Any suggestions?

First, ditch the stock headunit. Check out Eclipse or Alpine for a replacement.
Next, check out JL's component sets, the XR and ZR series. These sets sound exceptional when backed up with a good, clean class A/B amp, such as a JL 300/4 or A4300.
After, consider adding a 10" sub. I recommend using JL there as well. JL's W6v2 series woofs are designed with quality and quantity in mind, not just eardrum-popping bass, although they can do that as well. Back that up with a JL A1800 or 500/1 and you'll be in business.
According to those in the know, JL's "slash" series amps may be too much for the stock (crappy) charging system of the xB to handle. It is probably better that you consider the "A" series first. They are comparable in power and will provide great sound quality without destroying your alternator.
For an xB, avoid kickpanels. The concept of kicks is to lengthen the distance of the component from your ear, thereby creating a better stereo image by balancing the distances between R & L and the listeners' ears. Unfortunately, kicks in an xB would put your stereo image very low and not give the best in stereo imaging. Kicks are best used in cars that seat the driver and passenger more horizontally, such as a tC or Camaro.
For the xB, you are better off with components in the doors, with the mid angled upward to raise the stage. Installing the tweeter higher up on the door and angling it so that it deflects off the windshield will help to raise the sound stage as well. Be careful here. You do not want the tweeter too far from the mid as it will create a "separation" of the stage based on frequencies; i.e., lower sounds such as a bass guitar or kickdrum will seem to come from lower in the dash, while the snap of a snare or higher vocals will seem to come from the windshield.

2 Image Dynamic horns up front under the dash.. 2-8" subs under the seats and use one good 4 channel amp and a good line level and or a line driver/eq if budget allows
simple to install anyone can do this easy
it will play loud with decent sound quality and no power compression issues

Awesome. I haven't heard anyone mention ID's or USD WaveGuides in years. I did a few of those in some installs years ago and they do provide a great stage. They do need some sort of EQing, as they respond a little differently in every car.
...and I almost forgot... eDead or Dynamat the box before you install the stereo gear. You'll be glad you did.
