^^^So does the heat make the sheet a little more pliable to get it to bend and fold into tight spots...similar to an overlay?

What's the difference between the 3M DI-NOC Carbon Fiber Vinyl Wrap and the Carbon Fiber Fabric if there is any?

Yes, the heat is to make it easier for corners and tough folds/creases.

The 3M Di-Noc only comes in 1 color.

The cf fabric is intended for interior use only and the 3M Di-Noc is for exterior. Fabric requires the use of glue to apply and the 3M has adhesive backing.

Seeing that both products can be used on the interior which one would be better suited, easier to work with, durable, etc...

I have this stuff behind my scion badge for a long time... wasn't impressed since it has no shine like clearcoat and the surface is rough like our interior.

Carbon Fiber Fabric is better used on interior surfaces. It's more flexible as it's a cloth like material. Additionally, it's available in different finishes from matte to gloss to allow better match to any color scheme you might be going for.

Are you thinking about using the fabric on the mirrors? OP says that the vinyl is much better for the exterior parts.......

Yes it does. It works just like the Vinyl wrap people use to wrap graphics on cars. The application method is similar. If you're doing mirrors 3M is the way go to.
