My water temp goes up to 220 with the AC on in traffic, if I drop the windows and turn it off goes down to 206

flushing the cooling system will not resolve an overheating problem.
first things first, check coolant level.
check for a plugged or partially plugged radiator.
if a car overheats in city driving or stop and go traffic check cooling fan operation.
if a car overheats on the freeway, possible plugged radiator.
if car overheats all the time, check thermostat.
i could go on, but from what you said, i'd check coolant level, check for plugged radiator and look to see if the core of the radiator or condenser is covered (plastic bags, pet hair, dirt..)
but yea..the idiot light is useless, i hate the red/blue only indicator light.

using the scangauge.. i've gotten 420 miles out of one tank before the light turned on.. (about 34-35 mpg)
crazy road trip to socal... pretty much all highway... actually taking my merry time and realizing the major difference just driving the speed limit.. lol.
