take a bunch of photos and make an online album with music and the whole bit on one of those websites. Then just have a night where you make your friends some italian food with ingredients that are mainly found in Italy. Authentic italian yumminess!

no really what are you actually considering? I would probably do postcards while I was there. I can't really remember what stuff I actually liked in Italy that I could take back with me. I loved the pizza but ya that wont work. The scenery was awesome. The driving was crazy fun! All things you can't take back...well save for the driving you could try it out here but I don't think it'll fly, you might though!
