Ive been to most of Europe in the past 4 years. I am also making an effort to move there.
If you like beer, you MUST stop by Belgium on the way to France. If you can only make one stop there, make it Brugge.
Personally, I really dig the East opposed to the West, but the West is great for first timers as it is, well, very Western.
Try to get out of Amsterdam if you want to really know who the Dutch are - Amsterdam is full of tourists and Americans.
If you can learn how to say "please", "thank you", "I think you are beautiful"
and a basic greating, you will be treated with much more respect. Even if you totally blow the pronounciation, just making the effort will have the locals going out of their way to help you out.
Dont be one of those stereotypical annoying Americans. Honestly, I have very, very rarely seen anyone matching that description, but you know what I mean. You are in a new culture - take a chance and eat/drink/try things you might not ordinarly have the chance to....you may never make it back there again!
Above all, dont try to do everything and see everything - take some time to really appreciate your sorroundings.
My best piece of advice: A tourist is someone who takes something away when they travel (shirts, postcards, etc.). A Traveller is someone who leaves something behind (impressions on locals for example)

Honestly, any danger in Eastern Europe is greatly blown out of proportion. I have met some of the greatest people in countries like Latvia, Lithuania, Serbia, Croatia, Bosinia, Bulgaria and maybe the nicest people I have ever met come from Turkey. Moderate Muslim countries (like Turkey, Serbia, etc.) have populaces that are very law abiding.
When I was in Berlin, that was actually quite scary at certian times/places. More so than ANY Eastern country.
Maybe the most "dangerous" place I was in was Poland, but nothing bad happened, I wasnt robbed or assaulted...nothing like that. It just "felt" a bit dodgy.
If you have common sense and basic streat smarts, I dont think you will have any problems anywhere in Europe.
nice have a good trip...id like to go to spain sometime my great grandfather was from spain and moved to chicago ..then my grandpa moved to san francisco..it would be fun to meet relatives i dont know inanother country
