Noise/ISO discussion

It's new to me and I'm not certain what I should expect from it. I should experiment more since I love going over to Coronado and taking night time pictures. However I also have a feeling that's not all there is to high ISO's.
I've been shooting 320 as my base ISO for a lot of things and I'm very happy with the out come. I guess I should dedicate a whole day to shooting high ISO settings... Maybe the gardens in Balboa would be good for that. Or even better I'm going to Disneyland and maybe I can do some shots without flash on a few rides?

This was from my car shoot two gas pumps. ISO3200 Shutter speed 25 and f4.5 Canon 7D using 28-135mm lens.
I also shot a few down at the La Jolla cove area at 6400ISO.
and this one. It was fairly overcast with even darker clouds moving in. After about 45 minutes of rain free shooting as soon as I got in the car torrential down pour... Talk about luck.
However, I still think I'm missing the point of High ISO shooting or as the LOL Cats say amidoingitrite?
