Anyone know anything about American Pro Amps? Are they any good?

Also I have an 800w Fosgate sub, can I safely use a 1000w (500w/ch) amp?

They're a budget brand, ok for sub use if you're really tight on cash, but a reputable brand would be preferred.

Yes you can safely use a 1,000w amp with a sub rated for 800w, provided you know what you're doing. Configured optimally, the system can actually benefit from the additional ~1dB headroom the extra 200w could provide. Even with the gains set correctly, listen for distortion and if the sub is "complaining", back off on the bass.
