Need opinion on this potential set-up...

if you want to stay cheap go to hifisoundconnection.com or sonicelectronix.com; you can get good audio for low prices...not spend much and still get good sound. i've bought plenty from these sites in the past. you can get 'mid level' stuff from good name brands for pretty good prices. ( im not jsut a fan of buying audio on ebay cuz i dont trust where its been, or how reputable the company is; been scammed too many times)
The quality of those items you listed is fair and the prices are too, so if you like them, they can be used to produce decent sound. However, the end result will be totally dependent on the enclosure and installation.
They're 4-Ohm subs, and with that amp you'd either have to run it in stereo mode, or wire the subs in series for 8-Ohms if you wanted to bridge it (as it can only handle 2-Ohm stereo or 4-Ohm bridged loads), either one resulting in 170w for each sub, per the specs listed. That's adequate power for those subs to get loud, but then you have to consider the box. Note the enclosure sizes listed for the subs, as that's quite a large range. If you want decent SQ, then you'd need to go toward the larger end of those ranges, which means you'll need a fairly large enclosure that takes up quite a bit of space. Their listed frequency response spec also seems a bit limited at 37Hz on the low-end, but that may not be an issue, depending on your requirements.
It's up to you, potentially decent bang for the buck I suppose, if you don't mind a fairly large box, but you might want to keep looking for better alternatives to consider.

^ Yes, keeping most of the hatch space wouldn't be possible, if you want it to sound good and if we can believe the box volume specs they listed. They state for sealed each sub needs 0.6' to 1.5', and if the Fs is 37Hz (likely, given the freq.resp. listed), they probably wouldn't sound too good in a small box. For SQ, that probably means at least 1.0' each would be required (sealed & stuffed with ~1 pound of polyfill), with even more space being ideal. So that's at least a 2.0' internal enclosure, which is fairly large and would consume quite a bit of the tC's hatch space.

That's a good solution for those who use subs with smaller airspace requirements, but unfortunately their volume is inadequate for the Kenwood subs the OP asked about. While they'd fit physically, they wouldn't sound good in such a small box.
