Head unit shopping is a personal thing. The more you want out of them, the more you generally pay.
I decided to try one this one:

Apparently, this company is a spin or division of a parent company in Asia, which supposedly has a decent reputation from what few bits of information I could find on the company.
Anyway, I decided that I would check this thing out because it had some key features I was interested in at a good price point:
CD
DVD
MP3/WMA (Non-DRM)
TV (truly integrated; no tuner box needed)
Plays most burnable media formats on CD and DVD (CDR/RW +/-, DVDR/RW +/-)
Plays DIVX, XVID, VCD too on burned discs or an SD card
5.1 audio support with 50W /ch
Bluetooth (truly integrated; no add-on box needed)
XM Radio (Needs Universal tuner box, no extra box needed like other units)
Ipod control
Touch Screen and Remote Control
Multi-zone (people in the front listen/watch something different than people in rear)
Navigation ready (you need to buy a Valor Nav-1 unit to get Nav)
I picked up my unit for 725 bucks, and so far I'm liking it. I want to buy another multi-channel amp to run some new speakers on, but for now, I bought an Alpine sub amp for my eD SQ10 box that I hope to see next week (Thanks again Chris!).
I spend a LOT of time in my car since my commute is 40 miles and it takes me about 1.5 hours one way. That's 3 hours a day or 15 hours a week MINIMUM that I spend in my car. So, needless to say, I wanted to have a little entertainment to keep it from getting too boring sitting in the congo line.
I was going to check out an Eclipse or Pioneer double din head unit, but by the time that you add on the stuff you want like bluetooth and TV tuners, you are paying double what you would pay for the unit I decided to try.
One thing I can say is that I'm curious about how much better I can get it to sound when I get a multi-channel amp and new speakers; this should be interesting.
Anyway, Alpine, Pioneer, and Eclipse make nice looking head units, but I haven't heard any of them on good speakers. You might want to hit one of the big audio shops and listen to some of them with the same music. Bring your own CD, where you know what the music is expected to sound like so you know what sounds better to you.
A lot of sound quality judgement is subjective, so listen to, consider options on, and choose something that works for your ears and budget man.

. I would go with some components from either ElementalDesigns.com or get some CDT components. People that've heard CDT components know what im talking about, now ive never had the pleasure of hearing ED's but im sure their awsome too! CDT sells them on ebay too, they have an authorized dealer selling them with warranty and here's a great deal! I have the older model with the upgraded xover. I love these components! yea 2 mids and 2 tweets! Leave the rear speakers stock, you wont hear much of them since you'll have components up front!
6.5" front yes. Leave the rear stock, dont mess with them.
if your getting "components" them they need an amp. If your getting "coixals" (which will be a waste of money) then no amp, just straight from the deck. Since your already going with the JL setup that will be a pretty big setup, you should get some components to power up your highs, mids and lows! Other than that you'll hear nothing but bass and no music.

for front components, get a 2 or 4 channel amp depending on power requirements and amp stability/ohm loads
true SQ is having a stage up front to reproduce the music exactly as it was mastered. All your audio (CD's, MP3's, Radio, etc) is mastered in 2 channel stereo therefor you only need 2 channels to reproduce it accurately.
