I decided that some people might want a bit more out of their car, so I have decided to share what I have installed into mine.
I'm a bit of a nerd, and totally obsessed with Scions. I run a computer business much like the Geek Squad and NewEgg.com smashed together. While I have been doing this for a few years, I used to work for satan (Dell).
Anywho, my colleague and I have created a computer (small box) that fits directly into the glove box of the scion. While I was looking for a car to start the project on I was looking at the eclipse, and some other mid sized cars including the Honda FIT. The best part about the Scion is that you can fit a surfboard in the car so it leaves me plenty of room for my business. It runs to a camera in the back of the scion, and you can install more cameras if you like, the best part about it is, if a cop pulls you over you get to mark in car video, and if you go downtown to protest a speeding ticket, the public defender almost ALWAYS drops your case.
So anyway, the box is setup most like a linux media center. So it's essentially Windows Media Player but Linux, which means it's free software. The screen doesn't fit in your stereo bay either, so you don't have to do any kind of custom fabrication. It basically sits between the passenger seat, and the center console and is on a plastic movable wire, so you can move it out of the way if a person is riding with you, and you can either turn it sideways so they can use it or push it out of the way. The wiring and hook up is quite easy as well and you can either run to wal mart and grab an ac/dc converter and plug the power cord in, or run it off the battery with a few extra pieces. The power supply, although low voltage will survive an engine start and so far hasn't fried or done anything like that. We finished the test car a crappy ford tauras that doesn't move.

The main reason we have created this is because we wanted our cars to talk to our servers over the internet to be able to pull down customer information. Then be able to update it real time.
Some force air induction people will be able to run their turbo programs and modifications straight from the computer, so you don't have to worry about your laptop flying all over the place while your playing with numbers and graphs.
Although I don't have a price on these systems yet, we will probably be selling them from our website with full printed instructions as well as 24/7 customer support.
Just for Scion though, no other cars. Because to be honest I don't like any other cars.
We will be purchasing some Scion xB's for the project as well, so I'll let you know how hard it will be to convert but it will probably end up being easier.

I'm also trying to get a special antenna, and making sure Sprint doesn't try to charge more something out of their terms of service for the networking card.
It's a PC to PCMCIA, and I basically bought their wireless internet card and plugged it into the desktop system in the car.
