So the screens came with regular RCA jacks? Did you put a fuse between the power and the screens? And I'm assuming the screens were already wired to accept a 12v current. Let us know, later! :D
Yea, regular RCA jacks on the ends. Just like hooking into an old VCR, red, white, yellow. I did put a fuse on it, but I'm a fuse nut. I fuse everything even if it's on a fused line already. The cig lighter is like a 10 amp fuse, so I put a 2 amp fuse inline with the monitors positive line. These things are pretty well setup to work with 12-14.5volts and regular composite RCA's outs. Nothing fancy at all.

do you have any more advice for running the wires from the headrest through the seat? I think for my setup, I would need to get the wires from the bottom of the seat, and route them up and out of the top (where headrest poles are).

It was alot easier to go down than up. I used a wire fish (coat hangar works) to go thru the cushion under the back fabric. You can reach up under the back fabric and work the fish out of the bottom end

I have a monitor that was preinstalled into a headrest. The wire that runs from the headrest would not make it all the way down the seat. The end of that short wire would have to be attached to a longer wire that is connected to the RCA inupts/power/ground. I tried fishing it with a coat hanger down but it only goes so far. Got any more tips?
