Mine has always hit the center console - my knee hurt where it made contact initially - after a few thousand miles, though, I don't have a problem with it.

The silver coating of the console is wearing off where my knee hits it

you could try putting washers under the seat bracket in the front, or tilt the seat back a little more?

I am 6"-2" and comfortable, but it would be nice to have just a little more legroom, especially to stretch out the left leg. But then the steering wheel might be too far away.

I'm 6'-3" and actually enjoy the fit. Without a telescoping wheel, you have to be careful like vintage42 says and not move the seat too far from the steering wheel just to add leg room. You may compromise your control of the steering wheel if your arms are too outstretched. You have better steering control when your arms have a nice bend in them. Look at a NASCAR driver(or any race car setup for that matter.) They are practically right on top of the wheel with their arms nicely bent for best wheel control.
