What new tires should I get?
If you just need new tires and can't afford or don't want to spend the extra money on new rims just go to Tire Rack, read the reviews on tires available in your size and choose the tires that best fit your needs. Tire Rack also has tutorials that explain what to look for, reviews and comparisons. You'll get MUCH better advice than you'll ever get here.
I have a set of 19x8" TRD gray rims with 235/35/19 rubber (Nexen N3000 @ 4K on front, Toyo Proxes4 @ ~10K on rear) that I'd sell you for $500 + ~$150 shipping in ~2 weeks. Another $250-400 would probably get them freshly powder-coated in your choice of color. PM me if you're interested.

I did the exact same thing, and ended up with the kumho exsta 4x's. But I like "sporty" backroad driving, as well as do quite a bit of highway/crummy weather driving.
The $50 rebate didn't hurt either :D
Hope you find something that fits your needs!
I'm glad you quoted me because I wanted to expand a little on the last sentence of that post. I didn't mean that you can't or won't get good advice here but rather that you'll get a mixture ranging from good to horrible and much of it based on very limited user experience with the vast selection of available tires. SL also has a lot of fanboys who will tell you to buy whatever tires they happen to own because out of the 3 sets of tires they've owned, they are the best. Tire Rack allows you to tap into user reviews from thousands of end users as well as Tire rack's own professional reviews and comparisons. There are a lot of on-line tire retailers and some are cheaper than Tire Rack but I've yet to see any with anything even remotely resembling the buyer resources offered by the Rack. At best you call them and get the biased opinion of one salesperson.
Personally I've owned tires from Goodyear, BF Goodrich, Kelley, Cooper, Dunlop, Michelin, Bridgestone, Yokohama, Firestone, Pirelli, Metzler, Continental, General, Uniroyal, Falken, Kumho, Cheng Shin and probably others I've forgotten yet my experience means nothing because it's based on a small handful of tire models and sizes and spread out over 30+ years. FWIW...

I think it should ending up costing me just shy of $1,000 for new 18's all around. Kind of on the fence since:
1. I wont realize any money back on them when I sell my car.
2. New tires with the stock rims will cost about $600 less.
3. I don't feel that confident putting money into a car that I both like and dislike.
4. Bigger chance that my car will get broken into again.
What to do, what to do...

I ended up getting a quad of Blacklion Landscape BH15s installed. 55k warranty plus free repairs and rotations from the shop that installed them. They used the stock wheels. $360 out the door.
I was thinking about rims but altogether they would have raised the price of the tires to $1,000, not to mention added maintenance costs and such.
Thanks everyone for your input.

No offense meant but why ask for tire advice if you're going to ignore all of it and buy the cheapest chinese tires available?
Anyway, good luck. If you have any problems here is the link to Blacklion's website:
