Default Is this set up okay?

The size are 18x8 offset +32 114.3 5h and 18x9 offset +37 114.3 5h.

I want that flush look all the way around. A little poke is okay. Is running wider rims on the rear okay. I know it's good if the car is rear wheel drive but how bout for front wheel drive. What tires should I run?

I have a rs7 so I'm running on trd springs. eventually going to get coilovers. any suggestions on that?

Should be fine with a 215/40R18 tire all around. Will need a fender roll in the rear after coilovers.

You may not need a fender roll in the rear if you run a stretched tire. Rolling is easy by the way and people need to stop stressing about it. Its pulling a fender that is tricky.

I'm running df210 springs with 18x8.5 et28 front and 18x9.5 et28 rear. 215/40 front and 225/40 rear. No rubbing. You'll be good with the set up you mentioned.
