Good luck finding a WRX to test drive. Took me a few dealers to even get to see one. First dealer didn't have a single Impreza. Second dealer had 1 Impreza GT. Third dealer had my red Wagon sitting right out front.
Allow me to give you a simple run down on the WRX. The interior is a huge step over the tC, but it's nowhere near as refined as the GTI. Cheaper materials, bland layout, etc. The seats WILL feel like crap to you, especially since you're used to the Corbeaus, but they're more comfortable and you can modify the back of the seat to allow yourself to sink into it more. After I did that, they feel so much more snug and I fit in them very well, and if I can recall correctly, you're a tall skinny bastard just like me. It has gobs and gobs of power, and even after 7k miles of driving it, I still get a huge grin when I get to put all of the power to the wheels in 1st gear. The 5-spd is amazing, 40mph in 1st, 62mph in 2nd and 80mph @ 3k rpm in 5th. Gas mileage is the same as the tC, I usually get 22-24 when I don't care or 31-33 when I'm trying to get good gas mileage. If you can find one, drive it. I was dead set on the Gen Coupe, but I bought the WRX only after driving it once.
Oh, and there is beyond plenty of space inside the WRX with a helmet on. I'll go take some pics for you since I'm beyond bored.

So checking out Cars.com... it looks like I MIGHT be able to find a WRX around here... but will probably still be an hour away (at least). A dealer in Williamsport PA seems to have 3 in stock at the moment.
Maybe I can cruise down there after work this week...

Here ya go. Helmet on, in a proper seating position, I have around 4" of extra head room.
And I can fit more than comfortably in the backseat with my seat in my driver position, and I'm 6'5, 195.
My seat is probably close to how you have yours, nearly straight up, don't come anywhere close to have to reach to depress the clutch, wrist check, etc etc.

The inside of the WRX feels very similar to the xB2 in terms of size.
Btw, I was in the backseat with my helmet still on, that's how much headroom/legroom is back there. Not sure if the sedan has as much headroom though.
Btw, if you do buy one, try to find a Premium model, the heated seats, mirrors and wiper defroster is well worth the extra coin. The premium sound is a complete waste of money, as it's still garbage and the foglights are meh (compared to my retrofit, they're beyond useless). However, I don't think they sell the Premium model anymore, they have something else that has crappy leather, forgot the name.
Oh, and having a true AWD system is so awesome in the winter.

You'd be surprised. Yeah it'll spin but I've seen a MK5 with destroyed cams and messed up high pressure fuel pump walk awd cars or even keep up.
AWD is nice but honestly, the GTI is definitely worth every penny IMHO.
I've driven it for a while, beat on it and seen it beaten on to the limit of beating on a car and sure surprising.

this doesn't even take itnto account how the sube's feel like a beer can compared to VW's and trust me I know we have a legacy 2.5 GT limited in the family that I have put thousands of mile on...sube's handle well and have a bit too much turbo lag...for the purists the feel of the GTI will feel more like a purists car....the sube's are nice but not as great as you make them out to be

The Cooper has a ____ty interior and is a bit small. Until they make a non-retarded interior, it's not on the list. MS3 is sort of on the list - but I went to test drive one yesterday but the dealer was a total fail. And frankly, if I'm getting that much hp in a 5door, I'm going to get awd with it.
