She thinks I spend to much money on the car. Although she loves to drive it.

That seems means if they find a so-called quality replacement parts of low price, they can limit their payment to the low price and you have to pay for the difference if OEM parts have to be used.
"Like Kind & Quality" means that you can't tell the difference in fit and finish. Like generic drugs, same quality, lower price.

Camelback body shop won't put butt parts on your car because they want you happy and down the road after they're done.

Tell the insurance company that you will be trading the car in after the repairs. You will disclose the damage and how repairs were made with non OE parts. If that devalues the car by even 1 cent you will be back to have them fix it right!
