I do have a basic understanding. But understanding how the thermostat controls coolant is WAY beyond basic understanding. That is getting into the electronics and how things work with them. I could easily do an engine swap or turbo install (if I had the time). But even with something that complicated knowing the temp at what it opens or why it opens isnt even needed.
Now knowing how to replace it, thats minor maintenance. And an understanding of why, is not needed. yes it is good to know, but not detrimental, because reguardless of if you know or not, the operation is still going to work.
but I do like learning so I did take the time to read, and now i understand.

thermostat is just the dummy part of the system. It opens when the metal reaches a certain temp (182 on our cars, some cars not until around 220). What monitors the temperature is the ECT sensor (engine coolant temperature sensor). The ECT is monitored by the ECM. The reason being is that if the ECT is stuck open, the ECM will notice the coolant taking too long to worm up, and will set a code. If it is stuck closed I don't think the ECM will set a code but you will notice that your car is overheating. Is that better for everyone??? Also, where did you get the thermostat? I didn't see it at TRDsparks...
