Is it possible at all to put in a steering wheel in an 05 that has steering wheel controls so i can use them with my aftermarket HU?

Yes. You can set up factory steering wheel controls to function with aftermarket HUs, but it does require an additional module, some wire splicing, and a little programming. It's not too difficult, though, as the wire splicing is pretty straightforward and the programming is a simple test-and-verify process.
The module that you'll need varies depending on what aftermarket HU you are using.
