Currently I have a 215/45/17 set up with a 17x7 rim with a 35 offset

Had a 42 offset previosuly but my 35 offset rubs real bad; its not my 2" drop

Just wanna know if I should get 5mm spacers or 10mm spacers so they won't rub anymore basically a 40 offset or a 45 offset? Also will this have any effect on my hubcentric rings or anything else?I dunno

Well, your stockers have a +38mm offset. Those 17s with the +35mm should be good. Hmmmm.... ('_' ) ????

If you put some 5m spacers on your wheels 17" x 7" +35mm offset wheels, you're bumping the offset down to +30mm. If you put a 10mm spacer, your bumping them down to +25mm. In other words, your wheels will stick out more towards the fenders. I don't know if that's what you're trying to do. In simple terms, the lower the offset, the farther the wheels sticks out of the car. The higher the offset, the farther the wheel goes into the car.

I don't know where you're tires are rubbing at. Are they rubbing inside the inner wheel wells? On the struts? On the fender? What are they rubbing on? Do you want to push the wheels out towards the fender or do you want to push the wheels away from the fender & into the wheel well?
