I've found this site is a useful tool for comparing one wheel & tire setup to another, side by side. You'll be able to see how changing the offset and wheel diameter effects the distance between the wheel and fender. Just keep in mind that you are looking at a cross section of the wheel, tire, and wheel well.

Relevant - Check this site out too, it has pictures of pretty much any wheel and tire size combination to show tire stretch, very helpful.

funnily enough it didnt have a photo for my choice of 8.5 225 45 18 but i checked ones that were close to that rim width and they looked ok. glad i didn't go with 9" width or the rim would be slightly poking out of the tire. i don't want that kind of look.
