Default keeping warranty in tact...

Question: Not sure if anyone can answer this but, if I get different colored LEDs changed out in my dash, does that effect the warranty I have on the car?

If your gauges or parts where you changed out the leds fail, then yes because you modified it from stock.
But if you did nothing to the engine, and just modified led's, they shouldn't be able to refuse you service for engine problems.

From what I've heard, they need to be able to prove that what you did to the part made it fail, but I think it really depends on the dealer and how much you want to fight it.

No, nothing can void the warranty on your car. The only time there is an issue is when something fails DUE TO some aftermarket work that you have done. If you put in leds and your engine blows....get my point? They have to PROVE that what YOU did CAUSED the problem before they can negate warranty. And that is the case with everything having to do with warranty.
