It can cause damage to the rotors by overheating them and causing them to warp..... but normally this doesnt happen from one mistake like that...
Wrong. I have never heard of a car where the e-brake used rotors. On a side note, when your rotors are "warped", it's not that the metal is bent, there are just deposits or "hot spots" of brake pad material stuck to the disc creating an uneven surface and making the car shake while braking.

Right. It will only wear down the shoes that are only used for the e-brake. Don't do it too often, and you should be fine.

when i had my 02 escape i drove for about 15min. on the highway with the e brake on, i don't think it ever caused me any damage
